How To Make South Indian Red Garlic Chutney

First, gather all the ingredients: 1 cup grated coconut, 10-12 dried red chilies, 5-6 cloves of garlic, 1 tsp tamarind paste, and salt to taste.


In a pan, heat 1 tbsp oil and add the red chilies. Roast until they turn dark and fragrant. Remove from heat and let it cool.


In the same pan, add the grated coconut and roast until it turns golden brown. Remove from heat and let it cool.


In a blender, add the roasted red chilies, coconut, garlic, tamarind paste, and salt. Blend until it forms a smooth paste.


Next, heat 1 tbsp oil in a pan and add 1 tsp mustard seeds. Once they start to splutter, add 1 tsp urad dal and 1 tsp chana dal. Fry until golden brown.


Add the blended chutney to the pan and mix well. Let it cook for 2-3 minutes on low heat.


For added flavor, you can also add 1 tsp jaggery or sugar to balance out the spiciness.


Once the chutney is cooked, turn off the heat and let it cool. Serve with dosa, idli, or any South Indian dish of your choice.
